Lamb Kefta
To 450g ground lamb, add 2 tbsp. each of the following herbs: chives (or onion), mint, parsley and fresh coriander. Add 1 chopped garlic clove, a good pinch of cumin, salt and pepper, and mix with wet hands. You can also add a good pinch of cinnamon. Shape into balls. Sauté in a pan, or thread 1, 2 or 3 dumplings onto a skewer (shaped like a cattail) for the grill or BBQ, taking care to oil them. A winning tip: thread 1 kefta dumpling onto a 4-in. (9cm) garlic flower. Grill and eat your kefta with its skewer!!! Irresistible!
Blend yougurt, sour cream, chopped garlic, lemon juice, salt, pepper and fresh mint in a blender and serve with kefta.
