Les Fermes Valens naturally raised whole chickens are free-range, giving them enough space to move around the henhouse. It is fed a feed containing over 85% grain, and a guaranteed supply of protein.

Our breeders use no antibiotics in raising natural chickens.

Chicken meat is recognized as an excellent source of lean protein, low in calories and rich in vitamins and minerals. Among the nutrients contained in good quantities in chicken are phosphorus, which plays an essential role in the formation and maintenance of healthy bones and teeth. Selenium is one of the main antioxidant enzymes, and vitamins B3 and B6 contribute to energy production and the manufacture of red blood cells.

To cook, whole chickens are traditionally roasted in the oven. Here's the iconic recipe for roast chicken and baked potatoes:

  1. Preheat oven to 200°.

  2. Wash the potatoes (700 g of pommes grenailles), place in a saucepan, cover with cold water, bring to the boil, cook for 5 min, then refresh under cold water.

  3. Rub chicken with fleur de sel and thyme sprigs, season with pepper and tie up.

  4. Place the chicken in a dish and drizzle with 5 cl of olive oil. Place the chicken in the preheated oven.

  5. After 15 min, turn the oven down to 180°.

  6. Divide the potatoes and 4 cloves of garlic around the chicken. Return the chicken to the oven for 1 hour, turning every 15 minutes and basting.

  7. Remove chicken from oven and let stand 15 min. Sprinkle chicken and potatoes with fleur de sel before serving.
